Description

Manual harvest of the grapes in mid-September with high acidity levels; spontaneous fermentation with racking at the end of fermentation; maturation in steel on the fine lees and malolactic carried out naturally before the draft; selected organic yeasts are used for the second fermentation in the bottle; stay on the yeasts for 24 months.

Tasting

Nose of small red fruits and pomegranate, with light floral notes; creamy and fresh sip, with good persistence.
