BottlesManual harvest at the end of September beginning of October; spontaneous fermentation with maceration on the skins for 15/20 days and continuous pumping over; the wine matures in tanks for 8 months and is then bottled with a residual sugar that will allow it to referment naturally in the bottle.
Deep ruby red color with lively foam; intense nose, of ripe black fruit, spices and undergrowth, with hints of humus and wet earth; full and juicy sip, dry and deep.
Mixed boiled meats, soups, cured meats and cheeses, fried dumplings.
