Spontaneous fermentation in cement tanks at a fairly low temperature, with long submerged-cap maceration that can last up to 50 days; the wine matures in large Slavonian oak barrels for 6 years and then refines in the bottle for 6 months.
Garnet red in color with orange highlights; enveloping nose of dried rose, tobacco, and leather, with lightly spicy and earthy notes; complex and elegant on the palate, with smooth tannins and a long finish.
Game, truffle-based dishes, stewed red meats, braised meats, mature cheeses.
