Gamay 90%, Poulsard 10%
Spontaneous fermentation with indigenous yeasts, unfiltered, unclarified, without added sulphites; 20% of the mass is processed only in steel, another 20% once fermentation is complete, matures in exhausted barrels for approximately 7 months, the remaining 60% is vinified in acacia barrels in contact with the skins for 30 days; the assembled wine rests in steel before being bottled.
Intense nose, with notes of dried red flowers and berry jam; enveloping and slender sip, with soft tannins and long persistence.
First courses with game sauces, roast meats, mature cheeses.
