Harvested late in mid-October, with overripe and healthy grapes that are destemmed and ferment spontaneously on the skins for about four weeks: maceration continues for another 7 months before racking and decanting into untoasted wild cherry barrels, where the wine matures on the lees for another 6 years with frequent batonnage; decants naturally in steel before being bottled unfiltered; rests in the winery for further refinement.
Intense copper color, it has penetrating aromas of ripe fruit, softened by the long stay in cherry barrels, which also give it a sweet touch of the noblest and finest black cherry syrup.
Fish soups, grilled shellfish, grilled white meats, cured meats and aged or blue cheeses.
