Manual harvest in the first/second ten days of October, with selection of the grapes in the vineyard during the harvest; pressing of the grapes, not destemmed, with the feet; maceration with the peels and stalks for 8 days; no addition of yeasts, spontaneous fermentation without temperature control; maturation in terracotta amphorae buried for at least 6 months without decanting; bottle refinement. Each process is carried out following the phases of the moon.
Deep ruby red colour; nose of berries and ripe cherries, with spicy notes and balsamic hints; fruity, savory and velvety sip, of great persistence.
Grilled meats, first courses, cured meats and mature cheeses.
