Description

Manual harvest and cold skin maceration; tapping of virgin must only, without pressing; long fermentation in cold steel tanks, remaining on the fine lees with periodic stirring until the beginning of spring.

Tasting

Bright straw yellow colour; nose of orange blossom, bergamot and thyme, with hints of coconut and almond; balanced, persistent, very mineral sip.

Pairings

Aperitif, seafood appetizers, shellfish, grilled fish, grilled white meats, cured meats and slightly mature cheeses.
