80% Cabernet Sauvignon, 20% Foglia Tonda
Organic
Manual weeding, elimination of excess buds and shredding of the grass (the vineyards are grassed), selection of bunches in August and September; the grapes are harvested by hand at the beginning of October using traditional buckets; spontaneous fermentation in truncated cone vats with 10 days in contact with the skins and 30% of the stems; matures for 20 months in oak barrels and ages for several months in the bottle.
Deep ruby red colour; intense nose of well-ripe red fruits, sweet spices and wild herbs; sip with great structure and impact, good balance and softness.
Game, game, braised meats and stews, mature cheeses.
