Manual harvest in boxes in the third ten days of September; overnight skin maceration, soft pressing, fermentation in Allier oak barriques; The wine matures partly in steel and partly in full barriques for 7/10 years thanks to the film-forming yeasts (flor). Followed by further refinement in the bottle for a minimum of 8 months.

Intense golden yellow color; on the nose dried fruit, honey, fig and date, and a balsamic note. The sip is dry, enveloping, with a very long persistence.

Blue cheeses, preparations with significant spices, dry pastries.
