Description

Manual harvest in the first ten days of September. Selection of free-run must from a soft pressing of Pinot Noir grapes. Fermentation at low temperatures and brief rest in steel tanks. Second fermentation and maturation on the yeasts for over 20 months until disgorgement.

Tasting

Pale and delicate pink color. Fine and continuous perlage. The nose is complex, with notes of small fruits, currants, dog rose, hazelnut and sweet almond. The freshness and elegance of Pinot Noir emerges on the palate.

Aperitif, appetizers, shellfish, white meats, medium-aged cheeses.
