Lambrusco Grasparossa from Castelvetro
Organic
white vinification of hand-picked red grapes in boxes; only free-run must is used up to 15% of the yield, obtained from soft pressing of the grapes; secondary fermentation with the Classic Method, bottle aging on the yeasts for 30 months.
Enchanting lively amber color, very fine and persistent perlage; on the nose bread crust and spicy hints of black pepper and cinnamon, accompanied by a note of dog rose; enveloping, fresh and persistent sip, of harmonious complexity, which reconfirms the olfactory sensations.
Starters, raw meats, white meats, fish in sauces, shellfish.
