Description

The hand-harvested grapes are cooled and mashed after a short maceration without the use of any other substance. Spontaneous fermentation generally lasts 3/4 weeks. The wine matures slowly on its fine lees for at least 10 months and then continues refinement in the bottle.

Tasting

Nose of hay and wildflowers; savory and vertical sip, with marked minerality and good structure and persistence.

Seafood appetizers, grilled fish, white meats, cured meats, lightly matured cheeses.
