Small quantities of healthy, ripe grapes are harvested by hand from vines between 70 and 80 years old. Eighty percent of the grapes are destemmed by hand in a 30-hl wooden fermentation tank, while the remainder is processed whole bunches using 10-hl vats. Spontaneous fermentation occurs without temperature control, with daily punching down by foot, hand, or wooden punchers, followed by pressing after 10-12 days. The wine undergoes malolactic fermentation and remains on the fine lees in two 20-hl used oak barrels before being blended in February of the year following harvest without fining or filtration.
