Selection of the bunches of grapes in the vineyard and scrupulous sorting in the cellar; a linear destemming machine allows precise elimination of any green residue. Soft pressing and subsequent fermentation at controlled temperature in Slavonian oak casks; followed by a long maceration on the skins for 50/60 days, during which the wine undergoes malolactic fermentation. Maturation in Slavonian oak casks for the following 12/18 months.
Brilliant and deep ruby red colour; intense and mineral nose, complex, evoking cherries, embers and smoke, spices, with notes of underbrush and flowers. Ample graphite and iron on the palate, with the cherry returning; soft tannins and nice acidity sustain and prolong.
Meat stews, stews, braised meats, mature cheeses.
