Destemming of the bunches and maceration of the crushed grapes, soft pressing and spontaneous fermentation in steel tanks for a week without the addition of sulphur, at a controlled temperature; bottled after fermentation has not yet concluded, with a residual sugar suitable for refermentation in the bottle on its own yeasts (Ancestral Method).

Fragrant aromas of white flowers, apple and bread crust, enlivened by a pleasant freshness; clean and thirst-quenching sip.
