Corvina, Rondinella
Manual harvest in boxes between the end of September and the beginning of October, with selection in the vineyard; separate vinification for each vine harvested at phenolic maturity. Fermentation at a controlled temperature of 26°C followed by a short maceration; spontaneous malolactic fermentation. 80% matures in stainless steel tanks for 15 months; the remaining 20% for 12 months in large wooden barrels. Refines for 3 months in the bottle.
Good intensity ruby red colour. On the nose notes of cherry and berries; soft and balanced sip, with good persistence.
Risottos, meat-based first courses, grilled or stewed red meats, medium-aged cheeses, chestnuts, mushrooms.
