Grenache, Cinsault
Organic
Grenache and Cinsault grown on shallow white soil. Vinification of destemmed grapes in fiber vats; delicate maceration for about fifteen days; fermentation with Native yeasts and without the addition of sulphites. Six to nine months in barrels of different passages. Unclarified, unfiltered, no added sulfites.
Bewitching and juicy wine; rich and concentrated nose of small ripe fruits, with a spicy and herbaceous texture, fresh and persuasive. The sip is enveloping and succulent, always with a view to extreme finesse and softness, freshness and persistence.
Cold cuts, appetizers, semi-mature cheeses, red meats, rabbit.
