Manual harvesting in boxes with selection in the vineyard at the end of September/beginning of October; the grapes are destemmed, crushed and left to ferment in temperature-controlled stainless steel tanks. From the earliest stages, daily pumping over and several delestages are carried out; maceration lasts about 10 days; malolactic fermentation starts about 25/30 days later and, thanks to the minimum use of sulphites and temperature control, no selected malolactic bacteria are used; the wine matures in second and third passage French oak barriques for about 18 months; it is then refined in the bottle for 7/8 months.
