Manual harvesting in boxes with selection in the vineyard at the end of September/beginning of October; the grapes are destemmed, crushed and left to ferment in temperature-controlled stainless steel tanks. From the earliest stages, daily pumping over and several delestages are carried out; maceration lasts about 10 days; malolactic fermentation starts about 25/30 days later and, thanks to the minimum use of sulphites and temperature control, no selected malolactic bacteria are used; the wine matures in second and third passage French oak barriques for about 18 months; it is then refined in the bottle for 7/8 months.
Intense ruby red colour; delicate nose with hints of red fruits and delicate spices; robust and full-bodied mouthfeel with an elegant velvety structure and good freshness, with soft tannins and slight notes of bitter almond.
Earthy starters, first courses with meat and game sauces, braised meats, stews, medium-aged cheeses.
