Manual harvest, destemming and soft pressing; fermentation for 15 days in steel at approximately 18°C; maturation in cement tanks on the fine lees for 6 months with frequent batonnage; 3 months aging in bottle.
Deep straw yellow colour; nose of yellow fruit with fresh floral notes; Savory and mineral on the palate, with good structure and persistence.
Fish-based dishes, lightly matured cheeses.
