Description

Manual harvest in mid-September; cryomaceration for 24 hours, soft pressing and fermentation in stainless steel at controlled temperature for 20/25 days; maturation in stainless steel and bottle ageing.

Tasting

Brilliant straw yellow colour; aromatic nose of white flowers and citrus fruits; savoury and mineral, enveloping, fine and elegant on the palate.

Crustaceans, raw fish, vegetarian dishes, fresh cheeses.
