Le Chant du Vent Chardonnay 2020

Manual harvest, slow and gentle direct pressing overnight, spontaneous fermentation in used barrels, and subsequent maturation in wood for 17 months with malolactic fermentation. Minimal sulfites added at bottling.

On the nose, honeyed spices and ripe nectarine, with white pepper and floral notes leading to a surprisingly fresh and clean undertone of flint, cloves, and cinnamon. The palate is taut from the start and gives way to a full body, with a good alcohol content, that fills the mouth.
