Manual harvest at the end of August; extraction of the free-run juice only by soft pressing, alcoholic and malolactic fermentation in stainless steel; re-fermentation in the bottle with permanence on the lees for at least 24 months.
Light golden yellow in colour, fine and persistent perlage; nose of fresh fruit, apple and pear, with hints of sage and thyme and hints of bread crust; fresh and balanced on the palate.
Starters of land and sea, crustaceans and molluscs, mature cheeses.
