The harvested grapes are pressed whole and fermented in steel at a controlled temperature. The sparkling wine base is then assembled in winter, and remains in the tank to rest until the moment of draft. During the draft the wine completes the second fermentation in the bottle, in a controlled environment, after which the wine remains on the yeasts for a period of 36 months. After disgorgement, the wine rests for at least 3 months before being consumed.
Light straw yellow colour, fine and persistent perlage with creamy foam. On the nose aromas of toasted bread and citrus fruits, in the sip the minerality is found which leaves great cleanliness in the mouth.
Aperitif, shellfish, Vicenza-style cod.
