Manual harvest in mid-October, white vinification with cleaning of the must and fermentation at a controlled temperature, maturation in concrete and steel barrels for 18 months, refinement for two months in the bottle.
Straw yellow colour; nose of ripe fruit (pear, yellow peach), acacia and star anise. Very rich, enveloping, fresh and balanced sip.
Molluscs and crustaceans, tasty fish, fish soups, roasted white meats.
