Description

The grapes are destemmed and pressed softly so as not to break the seeds which would give herbaceous flavours. The skins and must remain together during a short fermentation aimed more at extracting color than developing alcohol levels. The must thus obtained is filtered and stored at a low temperature to keep the freshness and aroma characteristics intact. In order to carry out bottling it is necessary to complete the alcoholic fermentation in an autoclave, with the use of selected yeasts, until the typical liveliness and 5.5 alcohol degrees are reached.

Tasting

Cherry red color with purple reflections, with delicate foam and persistent liveliness. Vinous and fruity nose, of berries and flowers. Sweet and juicy sip, fresh, persistent, intense.

Pairings

Red fruit tart, pastry, after dinner with friends.
