Manual harvest in boxes with selection in the vineyard; soft pressing, with lung press, cold static decantation. Start of alcoholic fermentation in thermo-conditioned steel tanks. Second fermentation and refermentation in an autoclave at a controlled temperature with the Charmat method. Cold tartaric stabilization. Microfiltration and isobaric bottling.
Straw yellow colour; fine and delicate nose, with notes of rose; balanced sweet sip, of good thickness, velvety and persistent.
Fruit cakes, fruit salad, tarts, dry pastries, gorgonzola.
