Manual harvest in boxes with selection in the vineyard in the second ten days of September; destemming, spontaneous fermentation with maceration on the skins for 14 days in medium-sized wooden vats, with immersion of the cap 4/5 times a day; the wine matures for 12 months in 1500/2500 liter wooden vats; the second year all the vats are assembled in 50 hl wooden barrels where the wine is decanted without clarification and filtration; Bottling follows with subsequent refinement for 6 months in the bottle.
Deep straw yellow colour; aromatic and fruity nose, dry, savory and fresh sip.
Starters, crustaceans and molluscs, cured meats and medium-aged cheeses.
