Organic
Soft pressing of whole bunches, static decantation for 12 hours and subsequent inoculation of selected yeasts. Fermentation takes place half in wood and half in steel at 15/16°C.
Intense straw yellow colour. Nose of orange peel, aromatic herbs, spicy and vanilla notes combined with a strong mineral aromatic trait reminiscent of hydrocarbons. On the sip, soft and mineral, citrus fruits and golden apple emerge.
Aperitif, seafood risottos, fish second courses, shellfish, grilled white meats, medium-aged cheeses.
