100% Merlot
The bunches are harvested by hand in 15 kg crates and manually selected on a double sorting table before and after destemming and subsequently subjected to soft pressing. Fermentation takes place in concrete tanks, small portions of vineyard in barrels at temperatures between 25 and 30°C. Maceration times vary from 21 to 28 days. Malolactic fermentation begins in 100% new oak barriques, keeping the various batches separate for the first 12 months of maturation. Subsequently the wine is assembled and reintroduced into the barrels again for another year, for a total of 24 months. It rests and refines another year in the bottle before being released on the market.
Dark ruby red color. Perfectly ripe cherries, plums and spices emerge on the nose. The sip is broad and very rich, with an elegant and silky structure. Very long persistence and extremely clean.
