Manual harvest with selection in the vineyard; crushing-destemming, maceration for 14 days with maximum temperature control at 32°C; racking once the alcoholic fermentation is complete and subsequent placing in barriques in which the malolactic fermentation begins and is completed; maturation for approximately 14 months in the same barriques.
Intense, important aroma of spices and small fruits. The taste is full, structured, soft and persistent.
First courses with meat sauces, game, roasts, grilled meats, mature cheeses.
