Manual harvest with bunch selection on a sorting table; after destemming and soft pressing, the grapes remain in contact with their skins for 16-20 days in French oak truncated cone-shaped vats, with daily pumping over; malolactic fermentation and maturation follow for approximately 12 months in oval oak barrels; aged in bottle.
Deep ruby red color with purple highlights; complex nose of plum, currant, violet, and morello cherry, with lovely spicy notes; full-bodied on the palate, with silky tannins and good acidity, and a long, mineral finish.
Stewed, braised and casseroled red meats, grilled meats, mature cheeses.
