Description

Manual harvest in bins with selection in the vineyard; traditional winemaking from spontaneous fermentation with daily pumping over for 8/10 days; racking and soft pressing of the pomace with immediate reintegration of the free-run must; the wine matures first in barriques for 20/22 months, then in large barrels for approximately another 6 months.

Tasting

Deep ruby red colour; nose of black cherry and morello cherry, blackcurrant and blueberry; enveloping and complex, persistent sip, with ripe tannins and fruity and spicy returns.

Stewed red meats, braised meats, game and game, mature cheeses.
