Manual harvest in 15kg boxes; spontaneous fermentation in steel at a controlled temperature (25/28°), maceration for approximately 10/12 days; maturation for 12 months in raw concrete and at least 6 months of refinement in bottle.
Fresh and centered, of great versatility and cleanliness, enveloping, fruity, balsamic. Energetic and soft sip, with a fresh and saline finish.
Tuscan appetizers, cured meats, first courses, roast meats, medium-aged cheeses.
