Sangiovese 70%, Cabernet Sauvignon 20%, Merlot 10%
Organic|Biodynamic
Spontaneous fermentation with native yeasts takes place in 70hl conical Slavonian oak vats for Sangiovese, and in 25hl steel tanks for Cabernet Sauvignon and Merlot. The refinement takes place half in steel and half in used barriques, for at least 12 months; then a minimum of 3 months in the bottle.
Deep ruby red colour, intense aromas of cherries in alcohol and ripe plums, soft and enveloping sip.
First courses, vegetable pies, white and red meats, medium-aged cheeses.
