Negroamaro, Malvasia Nera
Manual harvesting in boxes with selection in the vineyard; red vinification with maceration in cement and steel vats at a controlled temperature for about 10 days at 24/26°C; after malolactic fermentation, racking and micro-oxygenation in steel vats; maturation in large French casks and ageing in bottles.
Decisive ruby red colour, complex and intense nose of ripe fruit, wood and spices; balanced and smooth on the palate, with a final note reminiscent of ripe carob.
Stewed game, braised meats, stews, mature cheeses.
