The winemaking is carried out with spontaneous fermentation using Native yeasts and maceration on the skins lasting 18 days in steel tanks at a controlled temperature. Malolactic and aging in 500 liter tonneaux for 36 months.

Deep ruby ​​red color, tending towards purple. It is intense and complex, of red fruits, wild herbs, spices. Wine of character and great longevity.
Long-cooked, moist, overcooked meat dishes, game and mature cheeses.
