Manual harvesting of perfectly healthy grapes, from two distinct parcels with different soils: one limestone, the other from a steep shale slope; separate vinification for each parcel, soft whole bunch pressing using only free-run must, spontaneous fermentation; unfiltered or clarified. No added sulphites.

Mineral nose, of stone, green apple and wild flowers, with spicy and fruity notes; dry and fine sip, rich and complex.

Seafood appetizers, crustaceans and molluscs, white meats, fresh cheeses.
