Manual harvest at the end of September/beginning of October; fermentation with long maceration on the skins for 7 months, maturation for 24 months in old barriques.

Antique gold color with amber reflections; intense nose of quince, cinnamon and dehydrated apricot. Enveloping, savory sip, with notes of aromatic herbs and lively tannins softened by the year spent in old barriques.
Fish soups, grilled white meats, mature and blue cheeses.
