Manual harvesting in boxes with selection in the vineyard of the best grapes from the smallest and most generous areas of the estate vineyards. After destemming, maceration is carried out in contact with the skins for a period of 15 days in medium-sized wooden vats with cap immersion 4-5 times a day. After fermentation, it remains on the noble sediments for a period of 12 months in 550l wooden barrels and 15-20 hl vats, after which it is blended in tanks, where the wine is decanted without clarification or filtration.
Coppery yellow colour. Complex aromas of rose, carnation, apricot, peach and a hint of white pepper. Juicy, savoury taste with a delicate almond finish.
Fish and shellfish, fried fish and fish soups, or cured meats.
