Marsanne 90%, Malvasia di Candia Aromatica 10%
The two varieties Marsanne and Malvasia are softly pressed in whole bunches and only the draining is used. After a traditional alcoholic fermentation at a temperature between 15 and 18°C, the wine is left to mature for 8 months in steel. It is subsequently bottled for secondary fermentation and remains in the 1400s cellar where it ages for 44/60 months on the yeasts before disgorgement.
Straw yellow color with greenish reflections. Complex nose of fresh fruit and white flowers, with salty notes. Soft, savory sip with sustained acidity, varied and intriguing.
Aperitif, seafood appetizers, raw fish, oysters.
