BottlesManual harvest in boxes at the end of September. Grapes destemmed, pressed at 0.6 bar, fermented with their own Native yeasts in cement. The wine matures for 7 months in concrete tanks. For refermentation in the bottle according to the Classic Method, Albina passito must is used instead of external sugars. No dosage and no sulphites when disgorged by hand.
Bright golden yellow colour, nose of dried fruit and white flowers with hints of bread crust; very fresh and fruity sip, very complex and long.
Aperitif, fish-based meals.
