Pinot Noir, Riesling
Manual harvest in 18kg boxes with soft pressing of the fresh grapes and fermentation at a controlled temperature in small stainless steel tanks. In the following spring, 30% Rhine Riesling is added to a batch of Pinot Noir and the resulting cuvée is bottled for refermentation. Disgorged after 24 months of aging on its own yeasts.
Pale straw yellow color with greenish reflections, fine and persistent perlage; delicate but decidedly floral and fruity nose with hints of jasmine and broom; fresh sip with hints of white fruit, notes of pear and pineapple.
Aperitif, appetizers, raw seafood, cured meats.
