Each variety is harvested by hand in September and processed separately until the final blend; destemming and fermentation of the crushed grapes at a controlled temperature at 28/30°C for 10 days, with delestage and pumping over; subsequent pressing and racking; maturation first in steel, then in oak for 24 months, partly in barriques and partly in tonneaux; final assembly of the varieties and refinement in the bottle.
Intense ruby red color. Nose rich in hints of red fruit, among which cherry, plum and berries emerge; balsamic and spicy notes enrich an intense and persistent bouquet. The sip is of great elegance, depth and length, with marked returns of olfactory sensations, a balsamic aftertaste and a finish of beautiful flavor.
Roast or grilled meats, braised and stewed meats, game, mature cheeses.
