Description

Manual harvest at the beginning of September, spontaneous fermentation, maturation in steel on the lees for a year; it is then bottled with the addition of fresh must from the following year, rich in sugars and natural yeasts; refines in bottle for 10 months, during which refermentation and second fermentation take place.

Tasting

Fruity and citrus nose, with strong notes of bread crust; sip of good complexity, fresh and fragrant.
