Black Pallagrello

The manually harvested grapes are destemmed, pressed and transferred directly into stainless steel fermenters where they macerate and ferment with Native yeasts at a controlled temperature of 27/28°C; after about 15 days we proceed with the racking, then with the separation of the solid parts. Malolactic fermentation is carried out in stainless steel tanks. The wine rests on the fine lees in steel tanks until May.
Ruby red color. The nose is dominated by hints of fresh fruit, followed by those of almond, broom flowers and violet. On the palate it has excellent flavor and good softness of tannins. Balanced and persistent wine.
Stewed meats, first courses with ragù, medium-aged cheeses.
