Description

Manual harvest in the first ten days of October; direct pressing of whole bunches with natural static decantation of the must for 30 hours; fermentation with pied de cuve of Native yeasts for 15/20 days, maturation in steel for approximately 6 months with five rackings carried out. Bottle refinement. Racking and bottling according to the phases of the moon.

Tasting

Golden straw yellow colour; intense and complex nose, of yellow pulp fruit and wild flowers, with marked mineral notes; rich and harmonious sip, of great freshness.
