Riesling Italico
The grapes are harvested at the same time and ferment together as a whole bunch in steel tanks in contact with the skins. It is bottled with residual sugars and then ferments in the bottle. It remains on the lees for 12 months before disgorging (à la volée). It is topped up with the same wine and is not dosed.
Very interesting, starting with the low pressure (about 1.8 atmospheres). The nose offers a basket of citrus and white flowers. The palate is juicy and captivating, with hints of passion fruit and a very persistent finish.
Aperitifs, starters, fried seafood, shellfish, cured meats and cheeses.
