Description

The two grapes ferment in steel and wood tanks with a light maceration on the skins. It is bottled with residual sugars and then ferments in the bottle. It remains on the lees for six months before being disgorged (à la volée). It is topped up with the same wine and is not dosed.

Tasting

On the nose, currant, pomegranate, and wild strawberry. The palate is dry, taut, and salty.

Aperitifs, starters, raw seafood, cured meats and cheeses.
