Pigato Riviera Ligure di Ponente DOC 2024

Strictly manual harvesting; the grapes are delivered by the members in the hours immediately following the harvest and are softly pressed upon their arrival in the winery where they are scrupulously selected; part of the grapes, before the classic white vinification, are macerated with carbonic snow for a few hours; the fermentation takes place at a controlled temperature in stainless steel tanks and carried out by selected yeasts; malolactic fermentation is prevented to preserve the freshness of the product; brief aging in steel and bottling in spring.
